I see nothing odd here. Savory ice creams are the craze in Europe, and have been for some time. A show on the Food Network featured flavors such as bacon and mustard. Foodspotting requested folks show their spotting of fried butter. Fried butter? Corn is sweet, crisp and good for you. It could be an ideal way to add texture and light sweetness to the likes of custards or ice creams. Carrot cake is still more of an oddity to me.
